My Father’s BBQ

Ribs being loaded in to a smoker. Shalamar of My Father's Barbeque in Carson, California.

Every now and again I’ll watch a documentary or food show featuring a grill-master bbq joint in a southern state. They always look great but leave me without getting to taste. That was until I was booked for a photography assignment at My Father’s Barbeque, in Carson California.

Arriving a little early, I was excited to get a personal tour of their kitchen and smoker. Ribs were being prepared with a signature dry rub. The certified Grill-Master, Shalamar, then placed the racks of ribs into the smoker. It would be several hours before they would be ready and I was thinking I wouldn’t get to try them.

After a little while, some smoked brisket had come out, ready to be cut for an order. I’m not up on the bbq lingo, but the brisket had a great color to it, with the fat looking almost like melted butter. Did I get to try it? You bet your life!

At the end of our photo shoot, with my gear packed in the car, Shalamar brought me out a little box, filled with smoked ribs and some of her signature sauce. Those ribs were fire.

If you’re in the Los Angeles or Long Beach area, do yourself a favor and go to My Father’s Barbeque in Carson. You won’t regret it.
